I’m sitting here watching the Macy’s Thanksgiving Day Parade with my family while preparing a few things for the meal tonight…and I had a thought and acted on it.

I wanted to take this opportunity to wish everyone of our clients, and readers and followers a Happy Thanksgiving. I am truly thankful for the things I have in my life and for all that I have been blessed with. I hope and wish for the best for each of you this holiday season!

Here is one of my favorite holiday recipes that I enjoy every Thanksgiving and Christmas. Hope you like it.

Cranberry Waldorf Salad

2 Cups cranberries (fresh, whole)
3 Cups miniature marshmallows
3/4 Cup sugar
2 Cups diced apples
1 Cup seedless grapes (halved)
1/2 Cup walnuts, chopped
1/4 tsp. salt
1 Cup whipped cream, whipped

Finely chop cranberries in food processor. Mix with sugar and marshmallows. Let stand overnight in refrigerator. Add apples, grapes, walnuts, and whipped cream. Stir and fluff. Makes 8-10 servings.

Note: The acid in the cranberries partially dissolves the marshmallows overnight, making a very creamy texture.
